Can you believe Memorial Day is almost here?
Memorial Day is a sign of warmer days to come, sunshine, beach days, and most importantly remembering those who lost their lives serving our country. Thank you to all of the men and women who so bravely fought for our freedom and paid the ultimate sacrifice.
I want to give you some fun, healthy recipes and activity ideas for all ages, so you can enjoy celebrating Memorial day in whatever way you choose!

Red, White and Blue Skewers
Assemble strawberries, blueberries with chunks of jicama, green grapes, angel food cake or pound cake on skewers
Grilled Portobello Mushroom Burgers
Marinade 4 portobello caps in 2 Tbs balsamic vinegar, 1 Tbs soy sauce, 1 tsp garlic power, dash of salt and pepper for 20 minutes. Grill for 5 minutes on each side and add your favorite burger toppings.

Non-alcoholic Blueberry Mojito
Ingredients
· 8-9 Blueberries
· 1 tbsp lime juice
· 4-5 leaves fresh mint
· 1/2 cup fresh orange juice (preferably chilled)
· 1 cup chilled sparkling water or soda (plain with no sugar)
· 1 tsp honey (more or less according to taste)
· ice cubes (for serving)
Instructions
In a small bowl muddle berries and mint leaves for a few seconds. Transfer into a serving glass
Add a few ice cubes, lime juice, fresh orange juice and sparkling water or soda. Give it a gentle mix and adjust sweetener according to your taste.

My Favorite Spicy Mango Margarita
Ingredients
· 2 oz Blanco Tequila
· 1 oz Cointreau
· The juice of 2 limes and 1 lemon
· 4 oz fresh mango juice
· fresh mango, cubed, or 1 cup frozen chunks
· 2 small jalapeños
· Tajin
· limes for garnish
Instructions
1. Slice the jalepeno, removing ribs and seeds for less spice
2. Rim a cocktail glass with lime and dip in Tajin seasoning, set aside.
3. In a blender add ice add a few slices of jalapeño and a few chunks of mango and blend.
4. Add in tequila, lime juice, mango juice and blend.
5. Pour into glass and garnish with slice of jalepeno and lime wedge.
