Buckeyes: a Nod and a Healthy Treat!

I hope you’re finding some joy in the holiday season by looking for special little moments of peace and pleasure where you can. One moment that brings me joy in the holiday season is making special holiday treats for family and friends! And, one of my favorites are Buckeye chocolates-a nod to my home state of Ohio (O-H…comment below with your response! ;) as this delicious chocolate peanut butter treat looks like a buckeye: the official tree of Ohio.  

This no bake treat is typically super dense and decadent and packed with sugar, so I decided to health-ify it a little bit, while keeping all of the deliciousness!  …Reese’s who??

Here’s my must-have, easy recipe for you, made with quality ingredients like the best nut butter, raw honey and no-junk-added chocolate! ENJOY! P.S you’ll want to make a double batch because they will go fast!

INGREDIENTS

·      1 c creamy peanut butter (My absolute favorite is this one + Use code NWW for 20%!)

·      2 scoops vanilla protein powder (I use this one)

·      1 1/2 tsp vanilla extract

·      2 TBS honey or maple syrup

·      1 c chocolate chips (I use this one and use code NURSINGYOURWAYTOWELLNESS FOR 15% off

·      1 TBS coconut oil

INSTRUCTIONS

1.     Beat the peanut butter, vanilla, protein powder, and honey or maple syrup in a bowl until well combined.

2.     Use a silicon mat or line a baking sheet with parchment paper. Scoop dough into 1 TBS balls, roll in your hands to get a smooth surface, and place on sheet. Repeat.

3.     Place sheet in freezer for about 20 minutes to firm.

4. Meanwhile, place chocolate chips in a small bowl and microwave for about 60 seconds total, in 30 second increments so they don’t burn. Then, add in coconut oil and mix together.

5.     Place a ball on the end of a fork or toothpick. Dip ball ¾ of the way into the chocolate. Allow extra chocolate to drip off and scrape the bottom gently on the edge of the bowl. Place on baking sheet.

6.     Freeze to harden, about 20 minutes.  Enjoy!
